It is now officially the dog days of summer and many youth are experiencing the boredom that comes with being home most days. This is why this particular treat is especially fun and refreshing. It calls for creating a mini-watermelon-like treat.

In order to make the watermelon treat you’ll need the following list of ingredients:

  • One cup of boiling water
  • Five limes cut in half. Scoop the pulp out. The pulp won’t be needed for the recipe but if you can find another use for it do so – waste not, want not. Be sure to keep the lime halves intact.
  • One teaspoon of basil seeds, poppy seeds, or sesame seeds
  • One pack of strawberry gelatin in the 3oz (85g) variety
  • A half cup of water
  • A cup of chopped strawberries or fresh fruit with the exception of pineapples since they are known to prevent gelatin from congealing. The fruits can be fresh or frozen.

Mix the gelatin powder with the boiling water and stir until the mixture looks like a flavored drink. It is at this time that you can mix in the chopped fruit and cold water and blend it until a smooth consistent liquid is produced. Place the liquid mixture into the fridge but just until it starts to thicken. Do not let it entirely harden. This should take no more than half an hour, but depends on the quality of the refrigerator.

Check it periodically. At this point, stir the mixture as that will get the fruit bits to float consistently throughout the gelatin as it hardens. Otherwise, all the fruit bits will have settled to the bottom. Gently remove the foam layer from the top of mixture. This is the point when it may now be placed into the lime halves. Let the mixture refrigerate another 60 minutes.

The final touch is to part the lime halves into quarters and sprinkle the seeds. The yummy result looks like a tiny watermelon packed with a very sweet taste.
