Butter and sugar are first creamed together, before adding a whole egg, an egg yolk and vanilla. Flour is next carefully weighed and measured and then added to the remaining dry ingredients: salt, baking powder, baking soda and cornstarch. The flour mixture is then carefully stirred into the butter mixture. White chocolate chips and sprinkles are folded into the batter before it’s pressed into a pie dish and baked for 25 to 30 minutes. Slightly under-baking the cookie is key in ensuring that the center stays soft, while the edges don’t crisp too much.
A simple buttercream frosting is then made by combining softened butter, confectioner’s sugar, heavy cream, vanilla and almond extract. Once whipped together, the frosting is then piped onto the edges of the cooled cookie. Sprinkles can be used to decorate treat, before cutting it into wedges and serving.
