Breakfast is the most important meal of the day, helping to keep blood sugar levels stable and energy levels high throughout your daily adventure. Unfortunately, many with careers, school or families, breakfast gets neglected. This hearty tater tot casserole is one quick and delicious answer to these busy mornings.
To make it, brown one-half pound of ground sausage in a pan. Drain it well and spread it on the bottom of a baking dish that has been sprayed with non-stick cooking spray. In a separate bowl beat four eggs with one-half cup of milk until well-combined.
Add salt and pepper to the egg mixture. Pour this over the ground sausage layer, and sprinkle with one-half cup of cheese. One bag of frozen tater tots should next be carefully layered on top of the cheese. Sprinkle an additional one-half cup of cheese onto the tater tots and cover tightly with plastic wrap and refrigerate until it is time to make breakfast.
In the morning, pre-heat the oven to 350 degrees and remove the casserole from the refrigerator. When the oven is ready, discard the plastic wrap and bake the casserole for 40 minutes while you get ready for the day. Serve the casserole warm with a side of fruit for a well-balanced breakfast, full of protein. It is sure to become a daily favorite.
