Luckily, blogger Jamielyn from I Heart Naptime shared a recipe for simple, quick, and delicious potato skins.
In her blog post, Jamielyn says that she made these potato skins for Superbowl Sunday, and all of her guests loved them. You don’t have to take the time to scoop out the potatoes, and you can get much more food out of each potato.
Jamielyn recommends using about four large baking potatoes for the recipe, but you can vary the number based on how many people you plan to feed. First, wash all the potatoes and cut them into half inch slices. Place all the potatoes onto a foil-lined baking sheet, and cover them with butter and salt. After heating the oven to 400 degrees Fahrenheit, bake the potatoes for about 40 minutes or until they’re lightly browned. Flip the potatoes after about 15 minutes in the oven to cook them evenly.
Then, Jamielyn covered the potatoes with cheese, bacon bits, and green onions. You can also add any of your other favorite toppings. Once all the potato skins have been decorated, put them in the oven for a few more minutes until the cheese has melted. As soon as they’ve cooled down, they’re ready to eat. You can dip them in sour cream or ranch dressing, or just enjoy them as-is.
These potato skins are filling and delicious, and you can make them without wasting the insides of the potatoes. The skin is still crunchy and flavorful, and this recipe is quicker and easier than most potato skins recipes. You can make them for any occasion, and people will be sure to love them.
