This Hash Brown, Spinach and Tomato Pie Is Breakfast PERFECTION!

  • 2 cups shredded hash browns (thawed)
  • 1 cup shredded cheese
  • 2 tablespoons oil (preferably extra virgin olive oil)
  • 3 cups fresh spinach (packed)
  • 2 cloves garlic (minced fine)
  • 1 cup of tomatoes
  • 4 eggs
  • 1/4 cup of milk
  • salt
  • pepper
  • nutmeg


  1. Head oven to 375F
  2. Coat a 9-inch pie plate with cooking spray
  3. Make a “crust” of hash browns as the bottom layer
  4. Bake hash browns for 8 minutes
  5. Remove from oven and add cheese
  6. In a skillet, saute spinach, tomatoes, and garlic for 3 minutes in oil
  7. Add skillet ingredients to top of potato and cheese
  8. In a bowl, whisk eggs, milk, and pinch of salt, pepper, and nutmeg until well-blended
  9. Pour on top of spinach and tomatoes
  10. Add cheese on top as garnish
  11. Bake for 30-35 minutes
  12. Serve and enjoy!
